I've started trying to make umeboshi!

I wanted to start last year, but I gave up because I couldn't get the plum fruit because I didn't get any crops.

The other day, a relative suddenly called me, "I torn off the plums, so come and grab them!", so I finished work and got them straight away.

I got 4 kg.
There were still some fruits left, but this is enough.
It was heavy rain the next day so I'm glad I went early.

Now, first of all, we have to soak the plum fruit in water overnight.

The next day, I quickly washed the plum fruit carefully and salted it.
I washed each one and removed the cane.

Place salt on the bottom, place the plums and sprinkle with salt. . .
Repeat.
The salt ratio was 15% of the weight of the plum.
15% of 4300g is 645g.

Once you've finished it, put a glass of vinegar and shochu, place a heavy stone, and cover it up.

It's just a lot of steps and it's very simple to do.
Once the water comes floating, you need to lighten the weights.
Now, you can enjoy delicious pickled plums next year!
